Cordoba has witnessed the tenth edition of the Soletes con Solera awarded by the Repsol guide. The gala was attended by 52 establishments in Andalusia. A return to tradition, to the classics that stand the test of time as well as to the new establishments that are devoted to the authentic.
An edition in which more than 300 new Soletes con Solera have been awarded throughout the country. Specifically, there are more than 4,400 spaces in which culinary tradition is celebrated.
Commitment to quality standards without sacrificing affordable prices and, in short, hospitality destinations where tradition and roots are not negotiated.
670 Andalusian cafés, bars, restaurants and wine bars are already part of this catalog of traditional spaces.
The proliferation of century-old bars, local cuisine and the appearance of traditional places is a declaration of intent.
“We want to celebrate those who have remained faithful to the flavors in which several generations recognize themselves,” explained María Ritter, director of Guía Repsol.
And the fact is that this newcomer distinction values those places capable of preserving immutable recipes or of elevating the custom.
“These Soletes con Solera share a common philosophy that is nourished by the environment and the inheritance received, so current in small towns and cities and that in recent times has spread this rootedness to the big cities and to a part of those who are opening their businesses”.
