The climate in Seville has the ability to allow us to crave ice cream all four seasons of the year. And given the myriad of flavors that dispense these spaces is to celebrate the emergence of unusual recipes. At Bolas they are experts in elaborating innovative seasonal proposals, such as Manu Jara’s palm tree ice cream, vermouth ice cream with Casa Vizcaíno or the one that concerns us: incense ice cream.
Rocío Cañizares, owner and master ice cream maker of Heladerías Bolas, has teamed up with Inciensos A. Fiances to create a historic ice cream so typical of the season.
This sanctuary of creamy ice cream incorporates a new recipe baptized as C/ Córdoba. A tribute to the iconic incense stand of the Fiances family on the street of the same name. In this case, they prepare it with their famous Cofrade incense, one of the most recognized of the Sevillian Holy Week.
Inciensos Fiances is a family business run by the sons of Adolfo Fiances, precursor of the Cristo de Burgos incense and the incense burners inspired by the chimneys of the Carthusian monastery.
In the words of the master ice cream maker, “Smell is the sense most closely linked to memory and there is no street in Seville that generates memories of Holy Week like Cordoba Street”.
When will Bolas incense ice cream be available?
It is a floral incense with roses, orange blossom and jasmine and is characterized by being very soft and vanilla. The result is a handmade and natural ice cream that can be tasted in all Bolas ice cream parlors in Seville from Friday, March 28th.
After a long career in luxury hotels and Michelin-starred restaurants, Cañizares settled in Seville. In 2020 to launch this project that received a Solete from the Repsol guide in 2023. This Christmas Gastronium distinguished as best Roscón Creativo his Magallanes roscón ice cream.
