The calendar establishes both consecrated seasonal recipes – to Lent we have to thank, above all, the torrijas – and gastronomic licenses as much of Holy Week as the incense ice cream of Bolas or “La Cofrade”, the novel hamburger of Monkey Food.
If in 2024 it launched “La Santa”, this year it does the same with this recipe that interested parties will be able to try in its Seville and Huelva premises without a deadline (for the moment).
It is a hamburger that evokes the Holy Week from the presentation. And it comes on a kind of step and aroma of incense.
How is this hamburger cofrade?
The cofrade burger in question is composed of a smoked bread with incense of passion, which is impregnated with the aroma of natural charcoal. In addition, the bun is caramelized with syrup, vanilla, cinnamon and honey, emulating the sweetness of torrijas.
Inside, it consists of double Frisian patty (2 x 90 gr), smoked cheddar cheese and bacon baked and caramelized with cane honey.
Crowning the inside is mayosanta, a mayonnaise infused with orange blossom water, vanilla and a touch of cane honey.
Monkey Food bets for this limited edition that reminds us of the aromas and flavors of the Holy Week and that in Seville you can taste at number 4 of Juan de Mata Carriazo.
