Stars and Suns, Bib Gourmands, and Soletes are awarded to must-visit restaurants and culinary establishments worth keeping an eye on; but these are not the only distinctions featured in the respective guides. The Michelin Guide publishes a monthly selection of recommended venues nationwide , and this March, a restaurant from Seville has made the list.

This March, the following restaurants are celebrating their inclusion among the Michelin recommendations: AÜC and Somodó Bá (Barcelona), Gurisa and Lina (Madrid), O Segredo do Retiro (Villaza, Ourense), La Oficina (Valencia), Surco (Ávila), Toy (Dènia), Aleño Brassafina (Pozuelo de Alarcón), Tossal Gros (Tarragona), and Ca Aleix (Xàbia). And of course, Augurio, the Seville-based restaurant included in the guide this March.
A concise menu of contemporary cuisine
El Arenal, home to some truly great restaurants, is home to a tiny yet promising spot. It’s located at 12 Julio César, between Alimentari and the Korean restaurant Danbam, and just a few meters from 10 Segundos, Barra Castizo, and Eterno.
The menu consists of fewer than ten items, a concise section for meat and fish, and one specifically dedicated to Almadraba bluefin tuna.
Located at 12 Julio César Street, right in the heart of Seville’s Old Town, Augurio is a restaurant known for its highly elaborate dishes made with top-quality ingredients, featuring fresh, locally sourced produce. A sign of things to come—the short menus—which are often an indicator of the quality of the ingredients.
Behind Augurio, the guide notes,“there is a young duo of female chefs […]. Lorena Cabezón and Carmen Granados are chefs—let’s start there—and after several years apart, they reunited at Seville’sTribeca […].
There are some standout dishes. For example, their squid tagliatelle with beurre blanc, truffle, and caviar, or the pork jowl ravioli with pig’s trotters and foie gras sauce.
They’re not far off the mark. Augurio serves up some spot-on dishes, such as its crispy butterfish taco with leche de tigre and guacamole ( the steak tartare bombita with truffle mayonnaise and fried egg codoniz, or the marinated coquelet chicken and egg salad , also make frequent appearances ).
Be sure to save room for dessert, where they offer three surprising creations. Delicious options include white chocolate namelaka, mango in syrup with toasted milk crumble, or pear in Oloroso sherry with dark chocolate and miso ganache, ice cream, and crispy sponge cake.
