With the emergence and trend of international cuisine, its gestures, ingredients, and recipes, there is also a lot of clumsy cultural appropriation and poor translation of some dishes. That is why it is interesting to pay attention to restaurants run by neighbors who have their roots in other towns. In order to savor first-hand the authentic cuisine of Lima, Palestine, or Japan. Non-commercial dishes are served in 10 seconds at this restaurant in Seville dedicated exclusively to Yunnan rice noodles.
Once you’ve gotten past the usual salad and potato omelet, which already have their own place of worship, why not take the pulse of El Arenal by indulging in this brand-new culinary promise: cooking noodles in just 10 seconds.
What is Yunnan Rice Noodle?
It could be confused with ramen or the classic hot pot, where you cook the ingredients over a low heat at the table. Neither one nor the other. The 10 seconds menu is a specialty from the Chinese province of Yunnan.
Long ago, according to the legend that presides over the restaurant, Meijiaoniang carried noodle soup to her husband, who was taking the imperial exams on the small island of Yunnan.
Apparently, the scholar achieved his goal , and since then this soup has been called “Crossing the Bridge Noodles.”

A gastronomic ritual in 10 seconds
What we are left with today, beyond a charming story that serves as a common thread for the business, is this recipe served in a ceramic bowl containing a concentrated, thick, boiling broth.
It is accompanied by a range of fresh ingredients: thin slices of meat, mushrooms, vegetables, quail eggs, and, of course, their handmade rice noodles.
The ritual involves adding the ingredients that take the longest to cook, gradually, and finally adding the noodles to the broth. These reach their optimum cooking point in just 10 seconds, absorbing all the power of umami without losing their elastic and firm texture.
Beyond the visual spectacle of watching the broth “cook” the feast in a flash, the 10-second noodles are unpretentious, deep, and flavorful.
The menu consists of eight main sections based on the type of broth. Namely: original bone broth, tomato/sweet and sour, spicy and sour, extra spicy, kimchi, black pepper, all in one pot, or mixed noodles.
Each section includes different varieties depending on the ingredients, with prices ranging from €10 to €12, never exceeding €14. Ideal for cold (and not so cold) nights at a more than reasonable price in the city center.
