The cuisine of Cal Viva
In the words of the Michelin Guide, Cal Viva “brings out the importance that this material has historically had in the economy of Morón. […] an updated traditional cuisine, based on seasonal and proximity products, with the option of two tasting menus that change daily and in which we let the chef choose for us: Omakase Andaluz and Homenaje Omakase.”
The project combines local seasonal produce with a rigorous technique and a wine cellar with more than 180 references.
It also offers, along with its menus, a constantly renewed menu that includes stews, seasonal vegetables, small game and fish of the day.
Its inclusion in the Michelin Guide continues to consecrate Cal Viva as one of the great projects of rural Andalusia, with the will to continue evolving as a reference of contemporary cuisine.
