
Javi Abascal has been extolling the goodness of Iberian products at his restaurant in Seville, Lalola, for years. On the occasion of the montanera season, he has devised an ephemeral tasting menu for February 6 at 21:00 hours with the help of Bodegas Hidalgo.
A journey dedicated to this important period of feeding of the Iberian pig, which collects the acorns from the oak. Thus, the menu includes 6 passes harmonized with wines from this Jerez winery.
Lalola’s Jerez montandera menu
The menu will start with Iberian acorn-fed cured meats and salami butter accompanied by Oloroso Villapanés. It follows a scallop tartar and chicharrón de Cádiz with fried green bell pepper emulsion. In this case, the fino La Panesa will do the same in terms of pairing.
A display of seasonal products, also evident in the mushrooms with poached egg and Iberian ham and Iberian mellow truffled with mushrooms. This duo is accompanied by the amontillado El Tresillo.
The savory part culminates with an Iberian cut cooked at low temperature with pumpkin millefeuille a la villaroy, harmonized with a palo cortao: Marqués de Rodil.
The dessert consists of a lemon and mint salt tartlet with Cream Morenita.
