The Gran Café España is dusting off its Lenten recipe book to offer diners a menu based on Lent in the center of Seville, starting on Friday, March 6. Under the culinary baton of Ramón López de Tejada, ‘Eight visions of Lent from the kitchen and the vineyard’ is presented , an experience that aims to take diners on a journey through the Andalusian pantry, with the focus, of course, on cod, an essential ingredient of the season.
The proposal is centered around cod, the undisputed king of this season, interpreted through six savory courses and two sweet courses. The technical mastery of the Seville restaurant is fused with a careful selection of local wines, from the whites of the Condado de Huelva to the intensity of the fortified wines of the Marco de Jerez.

The journey begins with a sophisticated liver pâté and cod roe with Pedro Ximénez reduction, followed by a smoked cod carpaccio with prawns and guacamole, paired with the freshness of Castillo de Andrade white wine (D.O. Condado de Huelva).

This is followed by cod and leek croquettes, along with an original spinach crepe au gratin with chickpeas and pine nuts in cream sauce—the traditional stew made into a bite-sized dish. Amontillado Don Zoilo (D.O. Jerez-Xérès-Sherry) accompanies both dishes before moving on to the main courses.

This is followed by two classics: cod au gratin on a bed of roasted tomatoes and a comforting chickpea stew with cod and prawns. Both are accompanied by the salty elegance of Manzanilla Cañabota.

The experience culminates with the essence of Lenten pastries: wine and honey torrija and Castilleja butter rosco, paired with the sweetness of Moscatel Padre Lerchundi from Chipiona.
