As a sort of positive cataclysm, the transition between summer plans and September brings, at least in Seville, a good amount of stimuli. To this category of fresh plans to change the season belong the new proposals of the restaurant De la O, a display of creativity in two menus for the autumn equinox.
Precisely Manuel Llerena, chef and owner of this reference in Triana, has baptized Formula Equinox to these gastronomic experiences. All of them come to embrace this seasonal culmination and start where the moon and the sun enjoy the same hours.
In fact, the two menus address the antagonistic sensations of day and night: a sunny stroll through the countryside or a walk along the coast under the full moon. And for this they bet on the origin of the product: orchard and countryside of Seville or fish and seafood from the fish market, respectively.
Llerena has prepared these two experiences that also compile some of the most iconic dishes of its menu.
Equinox Formula: two menus at De la O
A stroll through the countryside

The daytime proposal, that Walk through the countryside to which the chef refers puts the vegetable garden at the center of the equation and contemplates the following dishes:
- Duo pate and toast duo of Chicharrones de Cádiz saladadilla with vegetables pickled in Jerez vinegar.
- Tartlet of charcoal-grilled eggplants with acorn-fed Iberian shoulder and migas de pastor (shepherd’s breadcrumbs).
- Cheese and pumpkin cannelloni.
- Duck and apple braised.
- Chocolate and apple brownie.
Full moon night menu

This other tour at sunset evokes the nights by the sea, with elaborations starring fish and seafood.
- In this case they start with the cupcake and pionono duo.
- Grilled watermelon salad with cod confit and pickled onion in sherry vinegar.
- Crunchy red tuna tarantelo of Almadraba Petaca Chico with spicy chocolate foam and passion fruit cream.
- Marinated salmon and red cabbage.
- Passion fruit sorbet and framburesa.
For the first time, De la O offers the possibility of transcending the concept of à la carte dining with this selection of dishes priced at 42 €. It is expected that with the coming seasonal changes the formula will be extended and adapted to the products of the season.

You will find De la O in front of the Guadalquivir, on the Triana shore near the Cachorro, where tourism is not felt so urgently and gastronomy invites you to slow down and enjoy the murmur of the river, the crackling of the embers.
