The Seville School of Hospitality (ESHS), a standard-bearer for the sector’s savoir faire and a training ground for chefs, hospitality managers, and aspiring gastronomes, also offers workshops and seminars to explore specific topics in greater depth. In this regard, from February 10 to 12, it will hold its renowned Rice Seminar.
This event has been promoted by the Lezama Group for 32 years and will cover the preparation of different types of rice and the techniques involved.
Rice grower Miguel Pérez and chefs and professionals from the school José Manuel Torres and Manuel Campos will lead this seminar, with the participation of Arrozúa, Ferrer Wines, and Coca Cola. The collaborators Hermanos Rosso, Picking Market, Frutas Domínguez, and Maheso will also be part of the experience.
The seminar will be conducted using theinteractive show cookingmethod, where participants will observe while immersing themselves in the preparation of the recipes.
Throughout the seminar, participants will learn about choosing the right grain for each technique, the skill of achieving a socarrat (crispy crust) and delicious stocks and sofritos (fried vegetables).
Full program of the Rice Seminar
The seminar will take place from 5:30 p.m. to 8:00 p.m. on each of the three days and will cost €70 per session (€180 if you choose to participate in all three).
- Tuesday, February 10, will begin with the preparation of a fish and seafood arroz a banda, a crayfish rice stew, and a dry rice dish with steak.
- This will be followed by classic Valencian paella, a lobster rice dish, and a creamy boletus and venison rice dish on Wednesday, February 11.
- Finally, the experience will conclude with arroz a la llauna with seasonal vegetables, black rice with prawns and aioli, and a creamy rice dish with Iberian ham.
