There is no set rule regarding trends, nor are there any records indicating the limits of torrijas, if such limits even exist. It seems there is a correlation between the two, with torrijas at the height of their popularity and a wide variety of recipes and versions on the menu. La Esencia’s ‘poléa’ version, Manu Jara’s classic and avant-garde takes, and, ultimately, Domi Vélez’s. In this case, he adapts his ‘domicao’—the unique Lebrija-style version of Bollycao—into a French toast.
The renowned baker, recognized as the best in 2021, is embracing the season by turning one of his star products into a springtime snack: the torrija. So now you can purchase his sourdough brioche with chocolate, hazelnut, and vanilla for €1.95 or its torrija counterpart.
What is the ‘Domicao’ torrija like?
“What’s going to be the sensation of this Holy Week,” Domi Vélez noted on his social media, are the newly christened ‘domirrijas.’ In the same presentation video, he mentioned wanting to break away from the usual torrijas, which are otherwise fantastic in their traditional form.
Starting this Tuesday, March 17, they are available in his stores in Seville (downtown, Nervión, and Triana), Dos Hermanas, Lebrija, and Cádiz, and are expected to be priced similarly to the ‘domicaos’.
