It’s time to plan the right thing. Ponds, unique inland pools or any coastal destination lend themselves to getaways where a gastronomic plan can be integrated. Thus the Cadiz and seafood menu devised by Pedro Giménez (Tribeca) to be served in Rota on July 26 with the Barbadillo Winery.
And, considering the influx of Sevillians to their nearest beaches, it is grateful to know such seductive events as this pairing dinner with a Cadiz accent. Or, as they have seen fit to baptize it, “A date with a taste of the South”.
Specifically, the experience takes place at the Barceló Costa Ballena hotel in Rota at 21:00 hours.
Tribeca’s menu in Rota
For the occasion, an experience divided into two passages has been designed.
A first station type cocktail, where you can taste a selection of appetizers washed down by Vermouth Ataman and Manzanilla Solear. Namely: ajoblanco and grapes with muscatel and raisins; roteño starter with prawns; stuffed squid; potatoes aliñás with frigate tuna; veranillo of baby squid; shrimp omelettes and prawn croquettes with garlic.
In the second phase, three main courses will be served: octopus “a la roteña”; dogfish or skate with paprika and braised cheeks of red pork. It will harmonize bread and butter flavors of El Bucarito and wine As de Mirabás 2023, 100% palomino grape.
The experience closes with a pumpkin tocino de cielo with Eva Cream (75% Oloroso, 25% Pedro Ximénez).
The price of this pairing dinner in Rota with Tribeca and Bodega Barbadillo is 65 €.
