Since it opened its doors in 2022, Kinu has established itself as one of the undisputed references of Japanese cuisine in Seville. Three years after its opening, it is able to unfold to offer experiences adapted to every moment. The latest of these is the executive menu of Kinu, available on weekdays.
This harmonious restaurant is divided into two spaces (also two ways to savor Japanese cuisine): its omakase bar and a room where the dim light envelops the diner and where to try its menu, its tasting menu or this proposal that is handled in four acts.
Somehow, an executive menu establishes a pretended routine when, deep down, it is an excuse to continue eating delicious with more measured quantities and prices. So in the case of Kinu with the elegance and harmony that characterizes it.
Kinu’s executive menu: passes and prices
No outlandish dishes. The menu consists of three savory dishes and a dessert following the rigorous standards of the restaurant.
The first is a rice with egg yolk sauce(tamago kake gohan). A sort of Japanese-style carbonara that is, in fact, one of the most popular recipes as far as dishes of the day are concerned in Japan.
It is followed by a quartet of nigiris: snapper, shrimp, lemon fish and tuna. All of them include natural wasabi and are finished with a balanced dash of sake, soy and mirin.
The last of the savory passes is also one of the house’s signature recipes, the negitoro hosomaki . A forceful formation of identical tuna tartar nigiris, with natural wasabi and chives.
The dessert is a magnificent closure. It is a dark chocolate and red miso cake inspired by Ken’s CafĂ©. In this case it is penetrating and at the same time light in the mouth, so that the diner could, in fact, ask for another slice.
Kinu’s executive menu is priced at 40 euros per person and is available from Monday to Friday in the midday service.
